CRANBERRY WHITE CHOCOLATE PECAN OATMEAL COOKIES

This recipe is for a Cranberry White Chocolate Pecan Oatmeal Cookie I made with my son last week.  I love that it incorporates a bunch of holiday flavors and ingredients and is fairly easy to make with toddlers. My son enjoyed snacking on the mix-ins while cooking and then eating the cookies straight from the oven with a big ol’ glass of milk! Let’s just say these cookies did not last very long in my house and I will be making another batch very soon to share with friends and family over the holidays

It has been so fun seeing how much my son’s cooking skills (primarily scooping, pouring, stirring) have improved over the past year. He still makes a lot of mess but he is much stronger, has a longer attention span and his hand-eye coordination has definitely improved! I have definitely found the more freedom I give him to do it his own way (with some guidance of course) the quicker he learns!

INGREDIENTS
  • ½ cup all-purpose flour

  • ½ cup (1 stick) unsalted butter, softened to room temperature

  • ¾ cup light brown sugar

  • ½ cup chopped pecans
INSTRUCTIONS
  1. Preheat oven to 350 degrees. Line 2 large cookie sheets with parchment paper or a Silpat mat.
  2. In a large bowl, whisk together the flours, baking soda, cinnamon, and salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter with the brown sugar until smooth. Mix in the egg and then the vanilla, scraping down the sides of the bowl as needed.
  4. Slowly add the flour mixture to the wet ingredients and mix until just combined. Add the oats, dried cranberries, white chocolate chips, and pecans and mix until fully combined.
  5. Using a ~2 tablespoon cookie scoop, scoop the cookie dough and drop onto the prepared baking sheets. Very gently press down with your hand to flatten each ball of cookie dough slightly.
  6. Bake for 12 minutes. Let cool for 5-10 minutes then place on the cooling rack.
